In light of the global shift toward renewable energy, this study addresses the intermittent nature of solar radiation by integrating thermal energy storage techniques into solar drying technologies. This thesis presents a comprehensive experimental investigation and mathematical modeling of the drying kinetics of orange slices (4–6 mm thickness, 85–90% initial moisture content) under the arid climatic conditions of the El-Oued region, southeastern Algeria, during the summer of 2026. Two advanced Indirect Solar Dryer (ISD) prototypes operating under forced convection were evaluated and compared. The first setup utilized a conventional flat-plate solar collector as a baseline reference. In contrast, the second prototype was enhanced by integrating an innovative thermal composite material within the collector, marrying the high latent heat capacity of paraffin wax with the superior thermal conductivity of aluminum shavings (PCM-ALSH). The empirical results indicated that the PCM-ALSH integrated collector attained a superior thermal peak and produced a pronounced thermal lag during solidification, prolonging effective drying activities for several hours beyond sunset. This dynamic response effectively functioned as a thermal buffer, smoothing temperature fluctuations, reducing overall drying time, and preserving the nutritional and sensory quality of the fruit by minimizing adverse biochemical alterations (such as the Maillard reaction). Furthermore, thin-layer empirical and semi-empirical mathematical models (e.g., Page, Henderson&Pabis, and Lewis) were fitted to the drying curves, demonstrating robust statistical validation through the coefficient of determination( 𝑅2 ,)reduced chi-square( 𝜒2 ,)and rootmean-square error (RMSE). Fick’s second law was successfully applied to determine the effective moisture diffusivity( 𝐷𝑒𝑓𝑓 )within the product matrix, proving this hybrid system to be a highly sustainable processing strategy for arid desert regions
