Abstract

This study aimed to conduct a comparative morphological and physicochemical characterization of three date palm (Phoenix dactylifera L.) varieties: "Ghars," "Deglet Nour," and "Takarmoust," to evaluate the qualitative differences between them in terms of nutritional quality and biological activity. The laboratory results showed significant variations; the "Deglet Nour" variety was distinguished by the highest physical dimensions, with an average length of 5.0 cm and a weight reaching 5.17 g, while the "Ghars" variety recorded the lowest pH value at 5.93, indicating distinct chemical properties. Meanwhile, the "Takarmoust" variety showed antioxidant activity (FRAP) values comparable to "Ghars," with this activity generally ranging between 242.72 and 285.68 µg/mL. These results confirm that the variation in morphological and physicochemical properties among the studied varieties reflects a diversity rich in phenolic compounds and flavonoids, which enhances the nutritional and economic value of these dates.
